    Brewed with minimal hops, this beer is rested on raspberries with Brettanomyces and Lactobacillus for a full sour, fruity beer with hints of bitter orange peel and crushed coriander.

    This crowd pleaser showcases the complex character of bright, spicy Belgian yeast strain against the backdrop of subtly flavored malts.  Banana and clove from our yeast play well with the honey from the malt.

  • Farmhouse Ale, Saison - Ketchikan, AK

    We really like Saisons. Our taproom Manager, Donna, really likes Mosaic hops. But really, we like saisons: the fruity esters, the hint of phenols, and the general “funk” of the style really sets it apart. We married our saison grain bill and French saison ale yeast with Mosaic hops for a dry, fruity saison-style ale. Think passionfruit, blueberry and guava.

    • Grains: Two row pale, Pilsner, White Wheat, Flaked wheat, acidulated malt

    • Hops and Adjuncts: CTZ, Mosiac, Cracked Coriander

    The beer that started the brewery, inky-black and intensely flavored, this beer tastes of dark roasted coffee and chocolate. This complex beer is interesting enough on its own, but perfect for seasonal additions.

  • Farmhouse Ale - Saison, Ketchikan, AK

    A spin on the French saison that brings a new strain of hops, the Hallertrau Blanc, to the fore. The hints of pineapple, gooseberries, white wine, and infused grape from the hops pair well with the complicated fruity, spicy flavors of the saison yeast.

  • American West Coast Style IPA, Ketchikan, AK

    Not your standard IPA, and the other entree into the world of IPAs we plan on. An easy drinker with obvious hop characteristics (60+ IBU), this IPA uses traditional hops (Chinook, Columbus) and newer varieties (Citra), to really exemplify a modern West Coast IPA. The great thing about this beer is that it is the perfect base for additional flavors, such as grapefruit or a local favorite, fresh spruce tips.

    • Hops: CTZ, Centennial, Simcoe, Citra, Amarillo

  • Farmhouse Ale - Bière de Garde - Ketchikan, AK

    This traditional farmhouse ale from northern France is usually brewed early in the spring and lagered until summer for a malty yet dry beer with spicy, fruity esters.  Historically, up to five liters a day was part of a farmhand’s pay.

    4% ABV, 5 IBUs

    Our take on the traditional gose style uses Pilsner and white wheat grains, and Emerald Spire hops from Hang ‘Em High Hops in Michigan.  The hops have a great peach, apricot, and stone fruit aromas, complemented by the lactic acid twang from the kveik yeast and lactobacillus brevis co-ferment.  Not content with that, we indeed 55lbs of cucumbers, sea salt, and lime juice. Low IBUs and low alcohol, it’s a great, refreshing beer.

    This melon-forward, lightly sour göse is sure to quench your thirst on a hot summer day. Brewed with fresh melons, the subtle, natural melon flavor is incredibly crushable.

    This German-style sour beer is sure to tantalize tastebuds with it’s doughy, light, and bright tartness. Brewed with blackberries, this summer and fall favorite is sure to ecite!

  • Berliner Weisse - Kettle Sour - Ketchikan, AK
    4.9% ABV, 6 IBU

    This beer dates back 400 years. We use a truly old-school technique to make this beer: kettle sour mashing.  We incubate Lactobacillus debrueckii for 36 hours in our boil kettle to generate loads of sour.  With a simple grain bill and little hops, the real star of the show is the ‘sour’.  The result is a tart, bubbly, refreshing beer that is great on its own, or with other tastes like sea salt or fruit.

  • Brett Style American IPA - Ketchikan, AK
    (ca. 8-9% ABV, 75 IBUs)

    Generally, we don’t brew many IPAs, but this one is special. With a relatively simple grain bill, the hops and yeast are front and center. We use a mix of juicy, tropical Michigan-grown hops from Hang ‘Em High Hops and Brettanomyces bruxellensis Troi Vari as our primary attenuator. After a three month fermentation, we have a fruity, tropical pinapple and peach with a hint of that good Brett funk. It hits all the Beer Judge Certification Program specs for an IPA, but it isn’t your usual IPA.

    • Hops: Galena, Hydra, Gemini, Emerald, Mackinac.

    • Yeast: Brettamonyces bruxellensis troi vari

    Brewed in honor of CW4 Chris Boss’ retirement after serving in the U.S. Coast Guard for 30 years.
    Made with Maris Otter pale and a touch of melanoidin, this beer is the hoppiest we’ve ever made. Critus and pepper provide the backbone, with healthy notes of dank, earthy pine.
